FRIED SWEET POTATOES

  • 1 sweet potato
  • 1 tablespoon olive oil
  • Pinch of salt
  • 1 tablespoon paprika

Method

step 1 Cut the potatoes into circular loops by knife.

step 2  Put potatoes after cut it into circular loops in tray wrapped butter and
            pinch olive oil, salt and paprika

step 3  Put it in the oven until soften for 10 minutes then serve with ketchup and
           enjoy beautiful tasting

step 2  In a frying pan, put the olive oil, garlic, ginger , dry coriander, then add the chicken,
            stir the mixture and leave to reach golden Color.

step 3 Add the lemon juice to the mixture and leaves a little till coheres

step 4  Open the bread on one side, put the chicken, then add a little pickled cucumbers
            and serve chicken sandwiches with hot ginger. enjoy

SPINACH AND RICE BALLS WITH TOMATO SAUCE

Ingredients
  • 1 bunch spinach, chopped
  • 1 cup cooked rice
  • 1/2 tsp not ground nutmeg
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp grated lemon rind
  • 1 cup grated tasty cheese
  • 2 eggs,beaten
  • 2 cups fresh breadcrumbs
  • Oil for deep frying

TOMATO SAUCE
  • 15g butter
  • 425g can tomatoes
  • 1 onion  chopped
  • 2 tbsp chopped fresh basil

Method

step 1  Steam spinach in a little water until wilted,drain squeeze out
            excess fluid.Combine spinach,rice,nutmeg,Parmesan cheese,
            lemon rind,cheese and eggs.

step 2  Roll heaped tablespoons of mixture into balls,dip in extra beaten eggs
           ,then roll in breadcrumbs,refrigerate 30 minutes.

step 3  Deep fry in heated oil until golden brown,drain on absorbent paper,
           serve hot with tomato sauce.

FRUIT SALAD WITH LEMON SYRUP

  • 2 ripe bananas
  • 1/2 pine apple,cut into chunks

  • 1/4 cup lemon juice
  • 1 1/2 cup water
  • 1/2 cup vinegar
  • 2 tbsp mint,chopped
  • 1/3 cup desiccated coconut


Method

step 1  Combine fruits in a bowl,combine lemon juice,water and sugar
            in a saucepan,bring to boil stir constantly until sugar dissolves remove
            from heat refrigerate until cold.

step 3  Pour syrup over fruit,add mint and coconut,mix well.,serves
           so refreshing

  • 1/2  cup cashew nuts

            for 5 minutes or until golden brown.

step 2  Separate lettuce leaves,wash leaves,dry well.

step 3  Dressing.Combine French dressing and juice in a screw- top jar,shake well.

step 4   Combine torn lettuce leaves,mangoes,avocados,capsicum,snow pea sprouts
             and cashew nuts in a bowl,pour dressing over top,toss gently....to serve salad 
              as a main course serve with four thinly sliced pan- fried chicken fillets.

ZUCCHINI AND VEGETABLE FRITTERS

Ingredients
  • 3 lg eggs separated 
  • 1/2 cup plain flour
  • 2 medium zucchini 
  • 4 green shallots,finely chopped
  • 1 onion chopped finely
  • 125 g can corn kernels drained
  • 1 carrot grated
  • 1/2 tsp salt 
  • 2 tbsp whole grain mustard
  • 2 tbsp olive oil or veg oil
  • Sour cream to serve with
Method

step 1  Peel carrot,grate into a bowl.Add zucchini ,corn kernels,flour,shallots,onion,
           salt,wholegrain mustard,mix well.

step 2  Place egg whites into a separate bowl.,beat until stiff peaks.Fold through
            vegetable mixture.

step 3  Heat a large pan over medium heat.Add a little oil,add 1/3 of the mixture,cook
            for 5 mins cook 3 at a time,cook further 3 -8 mins turning on each side.when done 
             serve with sour cream...enjoy

  • 1 tbsp lemon juice

step 1  Preheat oven 350 degrees F 175 degree C

step 2  toast pita bread 5-10 mins until crispy,remove from heat then break into
            bite size pieces

SPICY NOODLES WITH GREENS

Ingredients
  • 3 pkts x 270g Hokkiem noodles
  • 2 tbsp vegetable oil
  • 1 bunch shallots,sliced thinly
  • 1/2 tsp Sichuan seasoning
  • 2 x200g pit tofu sliced
  • 1/3 cup wheat -free soy sauce
  • 2 tbsp sesame oil
  • 150g snow peas with the ends trimmed
  • 150g snap peas topped

Method

step 1 Cook noodles in saucepan of boiling water for 8 minutes,when done refresh
           under cold running water,then drain.

step 2 Heat veg oil in a wok or fry pan over med-high heat.

step 3 Add shallots,stir fry for 1 minute.Add noodles,seasoning,tofu and stir fry for
          8 minutes.Add tamari,sesame oil,peas and stir fry for 2-3 minutes.
          Serve and enjoy.

step 3  Melt the butter and sugar on the stove in a small pot.

step 4 sift the flour into a bowl.

step 5 pour over the melted butter and sugar ,and the beaten egg,mix well.

step 6  press firmly the mixture into the lined baking dish.,keep half mixture for the top
            covering

step 7  DATE MIXTURE

Ingredients
  • 1 cup dates,1/2 cup sugar 
  • 1 cup water

Method 

step 8 Boil together until thick,

  • 4 chicken breast fillets
  • 110g (4 oz) goats cheese
  • 1 tablespoon olive oil
  • 25g (1oz ) butter
  • 250g (9oz) mushrooms,sliced
  • 1 level tablespoon plain flour
  • 250g(8fl oz) white wine
  • 1/2 chicken stock cube,crumbled
  • Salt and freshly ground black pepper

Method

step 1  Divide the goats cheese into 4 and push a portion under the skin of each chicken
            breast.Heat oil in a pan,add the chicken breasts,skin side down.

step 2  Cook for 4-5 minutes over a medium heat,until the chicken skin becomes golden
            brown in color.Turn over and cook for a further 3-4 minutes.Remove from pan.

step 3  Add the butter to the pan and heat until foaming.Add the mushrooms and cook for
           2-3 minutes until starting to soften,then stir in the flour.Stir in the wine and
           100 ml(31/2oz) water,bringing to the boil with each addition of liquid.Stir in 
           the stock cube.

step 4   Return the chicken,skin side up to the pan and cook for a further 10-15 minutes
            ,can be served with mashed potatoes and green beans.

step 1  Preheat the oven to 200c/400F, Slice through the skin of the
           chicken leg,then arrange in roasting pan.Roast for 30 minutes.Pour

step 2  Whisk together the ketchup,sugar,honey,lemon juice,and garlic.
           Brush the mixture over the chicken and cook for a further 25 minutes
           ,basting a couple of times with the cooking juices.until it begins to caramelize.

step 3  Check that the chicken is cooked through the juices should run out clear when 
            the thickest part of the leg is pierced with a skewer.
