Ingredients
- 1 bunch spinach, chopped
- 1 cup cooked rice
- 1/2 tsp not ground nutmeg
- 2 tbsp grated Parmesan cheese
- 2 tbsp grated lemon rind
- 1 cup grated tasty cheese
- 2 eggs,beaten
- 2 cups fresh breadcrumbs
- Oil for deep frying
TOMATO SAUCE
- 15g butter
- 425g can tomatoes
- 1 onion chopped
- 2 tbsp chopped fresh basil
Method
step 1 Steam spinach in a little water until wilted,drain squeeze out
excess fluid.Combine spinach,rice,nutmeg,Parmesan cheese,
lemon rind,cheese and eggs.
step 2 Roll heaped tablespoons of mixture into balls,dip in extra beaten eggs
,then roll in breadcrumbs,refrigerate 30 minutes.
step 3 Deep fry in heated oil until golden brown,drain on absorbent paper,
serve hot with tomato sauce.
