its easy dinner recipes and  Great with a green salad as a side dish making this
  a smart meal for night also can be served with bread rolls.

                                        Prep time 15 mins  Cooking time 30 mins


  • tsp vegetable oil
  • 1medium onion,sliced
  • 500g sweet potato,peeled and thinly sliced
  • 1/4 cup water
  • 420g can sweet corn kernels ( or corn on the cob cooked)
  • 2 cups broccoli,cut into florets
  • 60g grated reduced -fat cheddar cheese or 25g grated  Parmesan  cheese
  • 1/2 cup low -fat milk
  • 6 eggs


step 1  Preheat oven to 180 c and grease a 20cm square baking dish with oil.

step 2  Combine onion,sweet potato,and water in a large bowl,cover with cling film 
           and microwave on HIGH(100%) for 5 mins .Add broccoli  and microwave on 
           HIGH ( 100%) for further 2 minutes.

step 3  Layer baking tin with half the sweet potato, top with corn,broccoli ,onion and
           remaining sweet potato.

step 4  whisk the eggs and milk,pour over vegetables,top with cheese and bake for
          30 minutes or until firm in the center.
