EASY POTATO CHIPS

Chips are delicious by them selves or served with fresh garden salad and bbq meats like
 steak ,Ba sausages,or fish..Also children like easy dinner recipes  dip chip into sauces
                                                                    or gravy


                                                  Prep time 10 mins Cook time 35 mins

Ingredients



  • 4-5 Medium potatoes
  • 5 tbsp Olive oil
  • 1tsp salt
  • Pepper


Method


step 1   Preheat oven to 180-200c

step 2   Heat a metal tray in oven

step 3   peel and cut potatoes in to chip shapes

step 4   Put the potatoes cut, into a pot of salty water,boil for 3-4 mins

step 5   Drain water,place potatoes onto a tea towel ( clean) or paper towel wipe off water.

step 6   pat dry potatoes

step 7   in a separate bowl place oil,salt pepper and potatoes,gently mix so the potatoes are
                                            coated with seasoning and oil.

step  Place potatoes in to the baking tray,place back into the oven for 30 minutes.,
                                            till lightly brown
           




CHEESY POTATOE BAKE

                  Cheesy bake is my granddaughters easy recipes favorite,this dish can be   
                served on winter nights as a side dish to Bake roasted meat and hard vegetables

                                   
                                            Prep time is 10 mins,Cooking time 40 mins


Ingredients


  • 4 Potatoes washed and peeled
  • 500 ml Cream
  • 1 cup grated tasty cheese
  • 1 pack French onion soup




Method

step 1   Preheat oven to 180 degree Celsius

step 2   prepare dish ,lightly grease with oil

step 3   cut ,the peeled potatoes into scallop shapes.
step 4   Sprinkle French onion soup with cream into a bowl.

step 5   mix together soup and cream

step 6   Pour mixture over potato scallops layered in baking dish.

step 7   Cover and place in oven,bake for 30 mins

step 8   remove dish from oven put cheese over potatoes bake further 10 mins
           till cheese melts.,and become brown.



CRISPY HASH BROWNS

Ash Browns are served with a hearty breakfast or it's a quick and easy recipes
                                                             winter  treat..


                                     Prep time 5 minutes,Cooking time 10 minutes

Ingredients

  • 4 Potatoes
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 tbsp black pepper
  • 3rd cup Flour plain
  • 3/4 cup Skim milk
  • 1tsp softened Butter
  • 1 egg beaten

Method

step 1     Peel potatoes ,and dice into small cubes,par boil in hot water till softened

step 2     Drain  water and place potatoes into a bowl,allow to cool for few minutes

step 3    When cooled ,add all ingredients to bowl of potatoes and mix,roughly together
               with the back of a spoon

step 4    Get two pieces of baking powder ,lay out on bench.put mixture in between the
              papers,then take rolling pin and roll out to 4 inch  thick.

step 5     Put into freezer to freeze till the mixture becomes frozen hard

step 6    When the mixture is frozen take out and cut into size and shapes you like
             The mixture should be easy to cut

step 7    In a pot with hot oil on the stove place one at a time the hash brown mixture
            for about 2 mins then remove and place on a rack to drain off excess oily hen
            repeat the process again placing hash brown into hot oil for further 30 seconds
            then back on to the rack to drain.

FUL MEDAMES -pronounced (Fool Ma-dah-mahs)

       Well ful medames are well served with a salad of cucumber,carrot,and eaten with
         a Egyptian bread ,very quick and easy recipes  enjoyable and light




                                                               Prep time 5 mins

Ingredients


  • 1 can Fava Beans
  • 30g tomato( 1 small )
  • 15g onion(1/8 small onion)
  • I clove garlic crushed
  • 1 sprig Parsley
  • 1tsp lemon juice
  • 1 tbsp Olive oil
  • 1/2 tsp Cumin ground
  • 1/4 salt to taste





Method

step 1    heat the beans in a bowl in the microwave or in pot on stove.

step 2   Drain the beans and put into a bowl,save the liquid to use later.

step 3    Add tomatoes,onion,garlic,lemon juice,olive oil,cumin and salt
             in a bowl with the beans.Mash all together to a thick consistency
             you want,if yo thick add remaining liquid left from beans.

step 4   do the seasoning to how you like it In taste , Using a spoon make
             wave patern on top of surface.

step 5   Cover with Olive oil and serve with Egyptian bread ...can have also
           pickled vegetables




CHICKEN BIRYANI

                                            15 mins prep 40 mins cooking time

Ingredients
  • 2 cups rice
  • 1 onion sliced
  • 1 Red Capsicum sliced
  • 1 tsp garlic from jar
  • 1 half cup peas
  • 1 half cup corn
  • 1 carrot grated
  • 1 kg chicken pieces
  • 2 tablespoons Biryani Paste


Method

step 1    Put 2 cups water into rice cooker then put rice in turn on so it cooks,
             while to attend to chicken.

step 2    Boil in separate pot chicken pieces with water,salted.

step 3   Take chicken from heat pour the chicken stock some into the rice cooking
           ,so the rice has chicken flavor,leave to cook through

step 4  In a saucepan on heat add oil,garlic,onion,and Biryani paste on low heat
           stir through without burning paste,add corn,beans,peas,capsicum,carrots
           stir through so flavoured by Paste

step 5    While cooking add the cooked rice and stir through,add chicken pieces 
             stir through all ingredients...cook for further 20 mins till all ingredients
              are coated through with paste .






BANANA CAKE

ingredients


  • 1 tbs vegetable oil
  • 1 brown onion thinly sliced
  • 500g lamb leg steaks cut into 3cm pieces
  • 1/2 cup curry paste
  • 5 tomatoes or 400g tin tomatoes
  • 1/2 cup coconut cream
  • 400g chickpeas rinsed and drained 1/2 tsp caster sugar
  • 75g baby spinach
  • Steamed baptismal rice
  • Poppadoms to serve
  • Natural yogurt to serve
  • Coriander leaves to serve




Method

step 1     Heat the oil in a large saucepan over medium heat.Cook the onion,stirring
              for 5 minutes or until golden.Add the Lamb and cook for 2-3 minutes 
              or until browned

step 2   Add the curry paste and cook,stirring for 2 minutes or until Lamb is coated
           and paste is aromatic.Add the tomatoes,1/2 cup(125 ml) water,coconut cream
          ,chickpeas and sugar.Stir to combine,bring to boil.Reduce heat to low and simmer
           uncovered  for 15 mins.Stir through the spinach until weltered.

step 3   Divide the curry into bowls serve with the rice,poppadoms and yogurt and
           coriander leaves

Easy Spanish Paella

Ingredients

  • 4 small Lobster tails
  • Water
  • 3 Tablespoons Olive oil
  • 1 Lg onion chopped
  • 2 cups of Spanish rice or short grain soaked in water for 15 mins And then drained
  • 4 Garlic cloves chopped
  • 1/2 tsp Cayenne pepper
  • 1/2 tsp Aloppo pepper
  • Salt
  • 2 lg Roma tomatoes chopped
  • green beans
  • 1b prawns peeled and deveined
  • 1/2 cup chopped Parsely




Method

Step 1     In a large pot bring 3 cups of water to the boil,Add Lobster tails and
               let boil for very briefly            
               time of (1-2) minutes until turns pink Turn heat off 

Step 2    Remove Lobster from water with tongs Do not discard the cooking
              water Cool Lobster off  when cool enough to to handle remove the shell
              and cut into large chunks

Step 3    In a large saucepan or flat pan heat 3 tablespoon oil on medium heat
             add onions.,sautéed onions for 2 mins then adding rice and cook further
            3 more minutes,stirring regularly.Now add-chopped Garlic and Lobster water
           ,stir in Saffron and its remaining soaking  liquid,Paprika,Cayenne Peppers,Aleppo
           Pepper and salt,stir in the chopped Tomatoes and green beans.  

Step 4   Bring to boil and let liquid slightly reduce,cover with lid or if you have foil use foil
            .and cook on low for 20 minutes.

Step 5   Uncover and spread Shrimp over rice,push slightly into rice
             ,(add little water if needed)

Step 6    Cover and cook further 10-15 minutes until the shrimp turns pink.

Step 7    add cooked Lobster chunks when Lobster warm through turn off he
             ,garnish with Parsley  and serve

Spaghetti Bolognaise

 ,budget wise it's very cheap meal Delicious and filling


Ingredients

  • 1/3 cup Tomatoe sauce
  • 2 Garlic
  • 500g beef
  • 1 brown onion
  • Capsicum Red
  • 1 Carrot
  • 1 stick celery
  • Pinch salt and pepper
  • 1 tablespoon Cooking Oil

Method

step 1 : put 2 tablespoon oil in hot pan,fry onions,garlic,capsicum till tender

step 2 : Gradually add mince meat ,to pan stir till brown,Add sauce and carrots
            salt and pepper stir all together ,simmer and cook covered for 10 minutes
           before removing lid

step 3 : While waiting for the meat and sauce to cook through in a seperate pot put
           3 cups water boiling on stove and place enough instant spaghetti into the boiling
           water with pinch salt

step 4 : spaghetti should be cooked when it's al dente,drain well and serve with meat
            sauce ...add  cheese  ...side dish can have a green salad and garlic bread  (optional)




Cabbage Chow Mein

  • 3 Cups Cabbage sliced finely
  • 1Red Capsicum slickly finely
  • 3 Cups water
  • 3 Tablespoon uncooked Rice
  • Soy sauce
Method

step 1  Heat oil in hot saucepan

step 2  Add onions and brown ,add meat brown

step 3  Add curry powder,frozen peas and corn,carrots,cabbage,capsicum
        ,and water,stir fry over medium heat,add rice stir then tablespoon of soya sauce
        ,stir fry ..then serve
