VEGETABLE SOUP

                                  Prep time 15 mins+ ( 2 hours soaking ) Cooking time 50 mins


Ingredients
  • 215g (1 cup) dried soup mix
  • teaspoons extra virgin olive oil
  • 2 celery sticks ,chopped
  • 2 zucchini  chopped
  • 1 swede, chopped
  • 1 turnip,chopped
  • 1 lg carrot,chopped
  • 1.5(6 cups ) water
  • 375ml(1 1/2 cups) salt-reduced vegetable stock or gluten-free stock
  • 1/4 cup chopped fresh parsley
  • Fresh ground black pepper to serve



Method

step 1  Put the soup mix in a large bowl.Cover with water,set aside

step 2  Heat the oil in a large saucepan on medium.Add the celery,zucchini 
            ,swede,turnip and carrot.Cook stirring occasionally ,for 5 minutes.

step 3  Add the water and stock to the pan,Cover and bring to a simmer over over
            a medium heat.Cook ,partially covered ,for 40 minutes or until the soup mix
             and vegetables become tender.

step 4  Stir in the parsley to the soup,sprinkle with pepper,to serve..serve with bread rolls ..
