cheesy chicken & mushroom so delicious and easy recipes for preparing and can be served with mashed potatoes and green beans.

                                           Prep time 5 mins Cook time 25 mins

  • 4 chicken breast fillets
  • 110g (4 oz) goats cheese
  • 1 tablespoon olive oil
  • 25g (1oz ) butter
  • 250g (9oz) mushrooms,sliced
  • 1 level tablespoon plain flour
  • 250g(8fl oz) white wine
  • 1/2 chicken stock cube,crumbled
  • Salt and freshly ground black pepper


step 1  Divide the goats cheese into 4 and push a portion under the skin of each chicken
            breast.Heat oil in a pan,add the chicken breasts,skin side down.

step 2  Cook for 4-5 minutes over a medium heat,until the chicken skin becomes golden
            brown in color.Turn over and cook for a further 3-4 minutes.Remove from pan.

step 3  Add the butter to the pan and heat until foaming.Add the mushrooms and cook for
           2-3 minutes until starting to soften,then stir in the flour.Stir in the wine and
           100 ml(31/2oz) water,bringing to the boil with each addition of liquid.Stir in 
           the stock cube.

step 4   Return the chicken,skin side up to the pan and cook for a further 10-15 minutes
            ,can be served with mashed potatoes and green beans.
